If you thought shave ice in Honolulu couldn’t get more exciting, there’s a new spot on Kalākaua Avenue that’s changing the game. SinIceStir Shave Ice — playfully pronounced “sinister” — has just opened in Waikīkī with a fresh twist on this classic Hawai‘i treat.

Unlike traditional shave ice stands where you pick your syrups one by one, SinIceStir takes a curated approach. Owner Bill Tobin describes the concept as “third wave shave ice,” where thoughtfully paired flavors — created by local chefs — are designed to complement each other from top to bottom.

The shop soft-opened on January 10, 2026 and is gearing up for a grand opening in the coming weeks. Four staple flavors will remain on the menu year-round, while another four will rotate monthly, giving locals and visitors something new to try on each visit.

Highlights include the Shark Bait, a playful riff on the classic rainbow shave ice with blue vanilla, lilikoʻi and strawberry syrups, plus mochi balls and gummy sharks. For a bold and adventurous flavor, the Blackout — featuring white chocolate seaweed and black sesame syrups with furikake — is already turning heads. And one of the seasonal favorites, Adult Supervision, combines Fruit Loops and lavender honey syrups for a fun and nostalgic taste experience.

Every shave ice creation starts with a generous bed of fluffy ice over soft-serve ice cream, with vanilla currently featured and more flavors planned for the future.
